Rainbow Riot Vegan Chili

A hearty fusion of mixed beans, lentils, and an array of vegetables and spices. Simply add 8-10 cups of water (2-2.5 jars) and cook on the stovetop or in your slow cooker to transform it into a flavorful and vibrant chili teeming with plant-based goodness. Makes 6 servings great for the whole family or your work week meal-prep.

Ingredients carrots, corn, red and green bell pepper, celery, pinto beans, cannellini beans, kidney beans, black beans, white navy beans, red lentils, chopped onion, sea salt, black pepper, chili powder, tomato powder, paprika, minced garlic, cumin, tomato flakes

Instructions

    • Slow cooker Pour the jar contents into your slow cooker and add 8-10 cups of water (2-2.5 jars). Turn the slow cooker to high and cook for 5-6hrs, or 8-10hrs if set to low. This is an easy set and forget method you can start before work and come home to. Cook until beans and lentils are tender. Stir in 2 tbsp of tomato paste, top with vegan sour cream or vegan cheese if desired. Carnivores, this pairs well with ground beef.
    • Stovetop In a heavy bottomed stock pot, pour in the jar and add 8-10 cups of water. You may add 2-4 Tablespoons of oil (pecan oil preferred). Cook, uncovered on medium heat for 1 hour. Cover and reduce heat to medium low and cook for another 1-2 hours or until beans and veggies reach the desired tenderness. Stir in 2 Tablespoons of tomato paste in the last 15 minutes of cooking if desired.
