'Farro the Love of Lentils' isn't just a tasty delight; it's a powerhouse of fiber and protein. A mere half cup of cooked farro packs 7g protein and 3g fiber, while the same portion of cooked lentils delivers a whopping 9g protein and 8g fiber. With this recipe yielding 6 cups, you get six hearty servings! Turmeric, carrots, sweet potato, and garam masala add a burst of flavor and nutrition, turning these ancient grains into a modern-day necessity.

Instructions

    • Slow cooker Pour the contents of the jar into a slow cooker with 8-9 cups of water. Cook on high for about 2 hours. Mix and check consistency after 2 hours and cook longer if needed for desired consistency in 20min increments.
    • Stovetop Bring 9 cups of water to a boil ( about 5-7min) in a heavy stock pot. Add contents of jar to boiling water and reduce heat to medium, then cover and simmer for 25-30min. Stir roughly every 10min and check for doneness at 25min mark. You can cook uncovered for 5 more minutes to cook off any excess water. Farro should be a little chewy but you can cook longer if a very soft texture is desired.
